大学生科研创新项目研究报告 项目名称： 北京地区饮食文化发展及公众对其看法的探究 项目类型： 重点项目 项目年度： 2013年 项目负责人： 王宇轩（学号：32012120014） 负责人院（系）： 统计学院 专业（方向）： 统计学（数理统计） 项目组成员： 王宁、郭嘉琦、马明文、董亮 指导教师： 马立平 教务处 制 二〇一四年 摘要 饮食文化是城市文化的重要组成部分，在饮食文化中，地方小吃最具有代表性，又有两千多年历史的北京城，先后多次被设立为国都，拥有深厚的历史文化底蕴。北京小吃也有悠久而辉煌的历史，在小吃发展鼎盛时期甚至曾拥有600多个品种。北京小吃文化呈现出明显的多民族特性，带有强烈的北京地域文化特色，并且在代代相传的过程中形成了独特的技艺性。面对市场的生存压力，北京小吃需要求变，但不管怎么变，北京小吃独特的文化内涵才是它的精髓，决不能丢弃。 本研究报告基于北京小吃历史文化，北京小吃生存现状，完整的描述了北京小吃目前的特点与发展现状，通过对公众对于北京小吃看法的调查，又进一步分析出北京小吃目前生存和发展所遇到的问题。根据这些问题，我们结合现代经营理念，提出“老”与“新”相结合的发展战略，对北京小吃的未来有一个美好的展望。 关键词：历史文化、生存现状、发展与展望 Abstract Diet culture is an important part of urban culture, the diet culture, the most representative local snacks, and the city with a history of more than two thousand years, has been set up for countries, has a profound historical culture. Beijing snacks also has a long and glorious history, the snack development boom even had more than 600 varieties. This study based on the Beijing snacks history and culture, Beijing snacks survival present situation, the full description of the Beijing snacks characteristics and development present situation, the current through the survey of the public view Beijing snacks, and further analyze the Beijing snacks at present a problem for the survival and development. According to these problems, we combined with the modern management idea, put forward the combination of \old\ and \new\ development strategy, the future of Beijing snacks have a good prospect.
