冷榨文冠果种仁油的体外抗氧化活性研究

摘要：以文冠果种仁为原料，采用冷榨法制备文冠果种仁油，通过试验考察了冷榨文冠果种仁油的
体外抗氧化活性。试验显示文冠果种仁油对羟自由基(·OH)和超氧阴离子自由基(Of·)具有较
较高浓度下对Fe2+诱导的脂质过氧化反应也有较好的抑制作用。表明文冠果种仁油具有很强的
体外抗氧化活性，有望开发功能油脂产品。
