一提到湖南不知道各位首先想到的是什么呢? 是美景 还是湖南卫视 是伟人 Hunan cuisine 肖微 覃旭 熊岳杨 Hunan is known as the land of fish and rice“. Hunan cuisine is characterized by its hot and sour flavor, fresh aroma, greasiness, deep color, and the prominence of the main flavor in the dishes. Hunan cuisine is hot because the climate in Hunan is very humid, which makes it difficult for people who live in Hunian to eliminate moisture. The local people eat hot peppers to help remove dampness and cold. Known for its liberal use of chilli(辣椒),peppers, shallots(青葱),and garlic(大蒜), Hunan cuisine is known for being dry hot (干辣) or purely hot, as opposed to the better known Sichuan cuisine, to which it is often compared. Sichuan cuisine is known for its distinctive málà (hot and numbing) seasoning(佐料) and other complex flavour combinations, frequently employ Sichuan peppercorns along with chilies which are often dried, and utilizes more dried or preserved (豆瓣)ingredients and condiments(调味品). Hunan Cuisine, on the other hand, is often spicier(香辣的) by pure(纯的) chili content, contains a larger variety of fresh ingredients, and tends to be oilier(油腻的). Another characteristic distinguishing Hunan cuisine from Sichuan cuisine is that, in general, Hunan cuisine uses smoked(熏制得) and cured(醃制的) goods in its dishes(菜) much more frequently. Hunan cuisine consists of local dishes from the Xiangjiang River area, Dongting Lake area and Western Hunan mountain area. It is characterized by thick and pungent flavor. Chili, pepper and shallot are usually necessary in this division. Style Originating regions Xiang River Changsha Xiangtan Hengyang Dong ting Lake Yueyang Changde western Hunan Zhangjiajie Jishou Huaihua 湘江流域的菜以长沙、衡阳、湘潭为中心,是湖南菜系的主要代表 。 (1) 特点是:制作精细,用料广泛,口味多变,品种繁多。 (2)著名代表菜有: 海参盆蒸、腊味合蒸、 走油豆豉扣肉、 麻辣仔鸡、 剁椒鱼头 洞庭湖区的菜,以烹制河鲜、家禽和家畜见长,多用炖、烧,腊的制法。 (1)特点是油厚,咸辣,香软。 (2)代表菜:洞庭金龟、网油叉烧洞庭桂鱼,蝴蝶飘海、冰糖湘莲。 湘西菜,擅长制作山珍野味、烟熏腊肉和各种腌肉。 (1)口味侧重咸香酸辣,常以柴炭作燃料,有浓厚的山乡风味。 (2)代表菜:红烧寒
