Besides the eight major regional styles, there is the popular Beijing cuisine, which keeps its traditional palace cooking styles inherited from the Qing Dynasty and absorbs different features of the Han, Man and Inner Mongolian ways of cooking. Having adopted a variety of local cuisine flavors, especially those of Shandong cuisine, it offers its own unique flavors. Almost everyone knows the typical course in Beijing cuisine. It’s Peking Roast Duck. IV. The Table Manners Table manners are the rules of etiquette used while eating, which may also include the appropriate use of utensils. Different cultures observe different rules for table manners. Each family or group sets its own standards for these. Chopsticks originated in ancient China as early as the Shang dynasty (1766-1122 BC) The earliest evidence of a pair of chopsticks made out of bronze was excavated from the Ruins of Yin near Anyang, Henan province, dated rough-ly in 1200 BC. Chopsticks are made from a variety of materials: bamboo, plastic, wood, bone, metal, jade, and ivory. How to use chopsticks maybe a problem and here are our suggestions that may be helpful: 1) It is poor etiquette to tap chopsticks on the edge of ones bowl, as beggars are believed to make this noise to attract attention. 2) It is impolite to spear food with a chopstick, unless the food is difficult to handle, such as fishballs. 3) It is considered poor etiquette to point rested chopsticks towards others seated at the table. 4) Chopsticks should not be left vertically stuck into a bowl of rice because it resembles the ritual of incense-burning that symbolizes feeding the dead and death in general. * * Unit 2 There are roughly four cooking styles in the world, Chinese, French, Turkish and Russian styles.
