变黄环境对烤烟多酚氧化酶活性及多酚类物质影响的研究-作物栽培学与耕作学专业论文 word格式.docxVIP

摘要本实验采用温度、湿度二因素回归最优设计，通过电热烘烤箱进行烘烤，具 体研究不同变黄环境对烤烟 K326 多酚氧化酶活性和多酚类物质的影响，结果表 明：在变黄期，随着烘烤的进行多酚氧化酶总体呈现出快速下降之后缓慢下降的 趋势，其中温度较高容易使酶活性较早的失活。总酚、绿原酸含量随着烘烤变黄 的进程而呈现出快速增加→缓慢降低→快速降低的趋势。芸香苷含量表现出快速 增加到缓慢增加的总体趋势，中间稍有波动。在试验温湿度范围内，随着温度的 升高，中温高湿更有利于总酚、芸香苷的增加，中温低湿更有利于绿原酸含量的 增加，其中温度对多酚类物质含量的影响大于相对湿度。多酚氧化酶活性与多酚 类物质含量之间存在着很好的线性相关性。综合考虑，以提高多酚类物质含量从 而增加烟叶中香气值，建议变黄中期环境温度在 36.3℃～38.6℃、相对湿度为 90.0%～95.0%为宜。关键词：烤烟；烘烤；变黄环境；多酚氧化酶；总酚；绿原酸；芸香苷Influence of Yellowing Environment on Changing Regulation of Polyphenol Oxidase Activityand Polyphenol Substances Content of Flue-cured TobaccoAbstract ： By the best regression of two factors of temperature and humidity and curing by improved flue-curing oven ， the experiment studied the influence ofyellowing environment on changing regulation of polyphenol oxidase activity and polyphenol substances content of K326.
