烟台樱桃果园土壤中酵母菌株的 相关耐受性研究 [摘要]从烟台当地的樱桃果园园区土壤中分离纯化出优质野生酿酒酵母菌Y7、Y24、Y27、F2、F6、F7,并对其进行相关耐受性的研究,最终得出野生酿酒酵母普遍能耐受20%糖环境,6%和8%酒精环境以及7%和9%渗透压环境;所有菌株均不能在高于60%糖浓度下生长,不能在高于16%酒精浓度下生长。在酿酒时可以控制这些变量,在一定程度上提高酒的感官质量。 关键词:耐受性;土壤;野生酵母; Research on?Tolerance of?Yeast Strain?Cherry?Orchard Soil in?Yantai Abstracts: The purified wild Saccharomyces cerevisiae Y7, Y24, Y27, F2, F6, F7 were isolated from Cherry Orchard Park in Yantai in the local area, Research and related tolerance on it finally found yeast generally can tolerate 20% glucose,6% to 8% alcohol and 7% to 9% osmotic environment.
