Thequalitativeanalysisofanthocyanincompositionsinsixpurplevegetablesweredeterminedusinghighperformanceliquidchromatography(HPLC)equippedwithadiodearraydetector(DAD)andcharacterizedbyUV-visiblespectraandelectrosprayionizationtandemmassspectrometry(ESI-MS2).TheanthocyanincompositionsinsixpurplevegetableswereidentifiedbycombinedapplicationofUV-visiblespectralandmassspetrometricanalysis.BasedontheMSandMS/MSspectratogetherwithextractedmolecularweightsobtained,6,16,17,8,6and11kindsofanthocyaninswereidentifiedfromredonion,redcabbage,collard,purpleyam,purplepotatoandpurplesweetpotatobyattentivestudyingonthemassspectraofcompounds,comparingwithreferencedataandcombinedapplicationofUV-visiblespectralinformation,respectively.Thecontentoftotalanthocyaninsfromsixpurplevegetableswasseparatelydeterminedbydual-wavelengthpH-differentialmethod,andtheRSDvaluesofresultwereallunder3.0%(n=3).Theanthocyaninsinredonionwereseparatedbyhigh-speedcounter-currentchromatography(HSCCC),andCyanidin3-O-glucosidewasobtained,thepurityofwhichwasmorethan95%.Dependingonthereferencesubstance,thequantitativeanalysismethodofcyanidin3-O-glucosideinredonionwasestablished.(3)ThescreeningofantioxidantactivitycomponentsforanthocyaninsfromvegetablesThisthesisdiscussedtheantioxidantactivityofofanthocyaninsfromsixpurplevegetablesbythefreeradicalDPPHeliminationability.TheresultindicatedthattheanthcyaninsfromthesixpurplevegetableshadgoodactivityoffreeradicalDPPHelimination,andasincreasingtheconcentration,theantioxidativeactivitybeingstronger.Thescreeningmethodofantioxidantcomponentsforanthocyaninsfromvegetableswasestablished,theproportionalrateoffreeradicalDPPHeliminationoftheextractofanthocyaninsdeterminedusingareanormalizationmethodbyHPLCat520nm,thehypothesisisthatuponreactionwith1,1-diphenyl-2-picrylhydrazyl(DPPH).Thepeakareas(A)ofanthocyaninscompoundswithpotentialantioxidanteffectsintheHPLCchromatogramswillbesignificantlyreducedordisappeared,thusrealizingrapidscreeningtotheantioxidantanthocyanincompositionsintheve
