w 植物色素变色行为的研究 摘 要 色素在植物体中大量分布，并参与植物体的生物活动。而不同植物具有合成适应自身特点的有机色素分子的能力各有差异，因此，不同的植物就表现出不同的体色及花色，从而使大自然呈现出姹紫嫣红的美丽景色。本文在对植物色素变色行为方面文献进行研究的基础上，对几种颜色鲜明的植物进行色素提取，通过测定不同植物色素在不同pH值溶液中的变色行为，并分析其在不同条件下的吸收光谱，探讨影响植物变色的各种因素以及相应的分子结构。本实验通溶液浸取法提取各种色素，研究色素变色的pH范围及其稳定性。选取以下几种植物进行研究：紫甘蓝、红提皮、香槐花、月季花。 关键词：植物色素 变色行为 稳定性 Study on Discoloration of Plant pigment Abstract Pigment in plants body mass in a distribution, and participate in the plant body biological activities.
