The review described test principle of dielectric property on liquid and dielectric property of frying oils including correlation fitting model between TPC and dielectric constant. Three rapid test kits: FOS, FOM 310 and Testo 270 were evaluated with their structure, operation and data reliability. Then the main factors affecting the accuracy of detection were analyzed to be oil variety, cali- bration, suspended solids and operation. F
