148 2011, Vol. 32, No. 04 食品科学 ※分析检测 1 1 1 , 2 1 1 , 潘文娟 ,方婷婷 ,廖爱美 ,张海祥 ,魏兆军 * (1.合肥工业大学生物与食品工程学院,安徽 合肥 230009 ;2.合肥师范学院生命科学系,安徽 合肥 230061) 研究不同蚕蛹油的脂肪酸种类和相对含量。采用气相色谱 - 质谱方法,对 KOH/CH3OH 酯交换法甲酯化 4 种不同的蚕蛹油进行定量分析。结果表明:柞蚕蛹、蓖麻蚕蛹、家蚕蛹及剿丝后家蚕蛹油的酸价、皂化值和过 氧化值存在显著差别;4 种蛹油的脂肪酸成分的种类都以棕榈酸、硬脂酸、油酸、亚油酸、α- 亚麻酸为主,但 含量存在显著区别;4 种蚕蛹油中,柞蚕蛹油的不饱和脂肪酸相对含量是最高的,达 77.29% ;蓖麻蚕蛹油的α- 亚麻酸相对含量最高,为 50.52% ;缫丝后家蚕蛹油不饱和脂肪酸的相对含量比缫丝前降低。 蚕蛹油;脂肪酸组分;气相色谱 - 质谱 Character and Fatty Acid Composition of Silkworm Pupal Oil 1 1 1,2 1 1, PAN Wen-juan ,FANG Ting-ting ,LIAO Ai-mei ,ZHANG Hai-xiang ,WEI Zhao-jun * (1. Department of Life Science, Hefei Normal University, Hefei 230061, China) Abstract :In order to determine the types and relative contents of fatty acids in 4 kinds of silkworm pupal oil, oil transesterification was carried out with KOH/CH3OH, followed by gas chromatography-mass spectrometric analysis. Results indicated that acid values, saponification values and peroxidation values differed significantly among the 4 kinds of pupal oil. All the four tested materials contained the following major components: linolenic acid (LNA), palmitic acid, stearic acid, oleic acid and α-linolenic acid, which exhibited different relative contents. Among them, the relative content of unsaturated fatty acids in oak silkworm pupal oil was the highest, which was up to 77.29% and castor silkworm pupal oil contained the most α-linolenic acid, with a relative content of 50.52%.
