According to adjusting of three basic factors, such as temperature, relative humidity and gas composition, storage leads generally to a reduction in metabolic activity.1And, the CA storage has the advantages of keeping original quality, delaying metabolism and prolonging storage term and shelf life of the product. The construction of controlled atmosphere storage is designed to obtain an appropriate gas-tightness. Then the composition of the desired atmosphere inside is maintained. In fact, it is not possible to make storage absolutely gas-tightness.
