文章编号:1001-6880(201 文章编号:1001-6880(2014)9-1434-06 芦笋植株欠开发部位营养、功能成分分析及比较 盼，谢明勇* 田颖刚，牛俊卿，张 南昌大学食品科学与技术国家重点实验室，南昌 330047 摘 要:芦笋笋基、芦笋老茎、芦笋叶为芦笋植株欠开发部位，对这些部位氨基酸组成，C、N、H 元素、矿质元素和 总皂苷、总黄酮、总多糖的含量进行分析，结果表明:芦笋的三种欠开发部位均含有 18 种氨基酸，总量分别为 15． 02% 、6． 49% 和 14． 00% ，必需氨基酸含量占 18 种氨基酸含量比例分别为 27． 56% 、29． 74% 及 35． 36% ;C 含 量分别为 38． 31% 、42． 19% 和 43． 64% ，N 含量分别为 3． 83% 、1． 27% 和 2． 76% ，H 含量分别为 4． 32% 、4． 56% 和 4． 64% ;芦笋叶的矿质元素含量最丰富，尤其是有机元素 Se 含量达到 0． 60 mg / kg，而芦笋笋基 Fe、Zn 和 Cu 含量 为三者最高;总皂苷含量分别为 3． 34% 、3． 51% 和 6． 95% ，总黄酮含量分别为 0． 17% 、0． 33% 和 0． 77% ，总多糖 含量分别为 4． 36% 、2． 03% 和 3． 44% 。经分析表明，芦笋笋基、老茎和叶中营养、功能成分含量丰富，不同部位 具有不同的开发价值，为充分利用芦笋废弃资源提供了科学依据。 关键词:芦笋废弃物;氨基酸;矿物质;皂苷;黄酮;多糖 中图分类号:TS201． 4 文献标识码:A Analysis and Comparison of Nutritional and Functional Ingredients of Different Parts of Asparagus officinalis TIAN Ying-gang，NIU Jun-qing，ZHANG Pan，XIE Ming-yong* State Key Laboratory of Food Science and Technology，Nanchang University，Nanchang 330047，China Abstract:In this study，the nutritional and functional ingredients，including amino acid，the element of C，N，H，the min- eral element，the total saponins，flavonoid and polysaccharides，of different parts of Asparagus officinalis ( the stem bot- tom，old stems and leaves) were analyzed． The results showed that eighteen amino acids were detected in each part of A． officinalis． The total contents of eighteen amino acids were 15． 02% ，6． 49% and 14． 00% for the stem bottom，old stems and leaves of A． officinalis，respectively． The contents of essential amino acids were accounting for 27． 56% ，29． 74% and 35． 36% of the eighteen amino acids． The contents of C element were 38． 31% ，42． 19% and 43． 64% ，respectively． The contents of N element were 3． 83% ，1． 27% and 2． 76% ，respectively． The contents of H element were 4． 32% ， 4. 56% and 4． 64% ，respectively． The contents of the mineral element were highest in leaves of A． officinalis，especially the contents of Se element reached to 0． 60 mg / kg． The contents of Fe，Zn and Cu in stem botto
