Summary In this article, we develop models to analyze pans, including the distribution of heat across the outer edge of a pan for different shapes, and the method to select the pan shape to reach the optimal objective for different weight of conditions and width to length ratio of the oven. Firstly, we use the experimental law of Fourier in heat conduction to build the model of temperature distribution of the pan. To be representative, we choose seven shapes of pans, namely circle, square, ellipse, rectangle, rounded square, rounded rectangle and hexagon, and give their temperature distribution figure with the help of PDE toolbox of MATLAB. To analyze the distribution of heat on the whole pan, we use the statistical parameters and histograms of temperature data for different shapes. To analyze the distribution of heat across the outer edge, we use the temperature gradient to measure the heat concentration degree, namely the overcooked degree of the outer edge. In order to make it clear, we use polynomial regression analysis to compute the gradient norm distribution curve at one edge of the square and rounded square by extracting the gray scale matrix from temperature gradient distribution figure. Finally, we get the distribution of heat of a pan for different shapes. In the analysis of the method to select the pan shape, we firstly give an evidence to choose the rounded rectangle pan as best based on the former conclusion. Then we define two unified comparable criterions to measure the number of pans fitting in the oven and the even distribution of the pan, and build two models: universal model and special model to give a nonlinear objective optimization.
