冷链物流中温度对水产品质量的影响研究 摘 要 因为我国人民生活质量的逐渐提高，我国人民对水产品的要求也逐渐提高，开始追求优良品质以及多种多样的水产品，近几年来，冷冻食品的需求日益增加，而水产品以其高蛋白、低脂肪、特别是低胆固醇的特点，被消费者广泛接受。 但生产地和消费地之间的分布不均，导致水产品冷链物流需求量大。目前，冷链物流发展水平较低，对我国水产品流通造成了不良影响。因此，在我国发展冷链物流已迫在眉睫。随着世界人民生活水平的快速发展，消费者对水产品食品的品质、营养、安全、新鲜度的要求越来越高，但是通常在水产品的冷链物流中，水产品的质量会受到一定的影响。 本文针对水产品的冷链物流，对水产品的市场进行分析，了解水产品的进出口贸易情况以及相关物流企业的现状，研究水产品冷链物流的温度对其产生的影响，探索其在冷链物流不同温度环境下的水产品受到的影响，对冷链物流中的温度监控技术进行简要的描述以及分析，了解冷链物流中温度监控的新技术，并且对中国水产品冷链物流温度控制提出合理的建议，在冷链物流运输的过程中实现水产品的质量保证。 关键词：冷链物流；水产品；温度；水产品质量 Analysis of the influence of cold chain temperature on aquatic product quality Abstract With the improvement of peoples living standard in China, peoples requirements for high-quality and diversified aquatic products are getting higher and higher. Nowadays, low cold-chain logistics development resulted in sales of aquatic products be impeded. Hence, we must develop cold chain logistic. With the rapid development of peoples living standards in the world, consumers have higher and higher requirements on the quality, nutrition, safety and freshness of aquatic products, but usually in the cold chain logistics of aquatic products, the quality of aquatic products will be in.
