张楠毕业设计说明书定稿 张楠毕业设计说明书定稿 PAGE / NUMPAGES 张楠毕业设计说明书定稿 - 让每个人平等地提升自我 内蒙古科技大学 本科生毕业设计说明书 题 目：年产 2200 吨碱性蛋白酶发酵工 段工艺设计 学生姓名：张楠 学 号： 04 专 业：生物工程 班 级： 07-1 班 指导教师：徐永斌 助教 1 年产 2200 吨碱性蛋白酶发酵工段工艺设计 摘要 本次毕业设计的任务是年产 2200 吨碱性蛋白酶发酵工段工艺设计。 碱性蛋白酶由微生物发酵法生产， 主要用于加酶洗涤剂工业， 在制革、丝绸、饲料、 医药、食品、环保等工业也有广泛的应用。设计中首先根据参考资料选定碱性蛋白酶发 酵生产的具体工艺流程，通过物料衡算确定需要 100 立方米发酵罐 3 台和 10 立方米种 子罐 1 台，在此基础上得出发酵工段所需要的各种原料量，通过能量衡算确定水、无菌空气和蒸汽等的消耗量。然后对主要设备进行计算和选型，得出发酵罐、种子罐及通用设备、非标准设备等的结构尺寸、冷却装置、传动装置，根据工艺要求确定罐的附属设备和辅助设备以及发酵过程中的优化控制。最后设计了发酵工厂的车间布局，提出了相应的公用工程、安全卫生与环境保护等辅助工艺。根据计算结果，设计了六张图纸，分别为发酵罐装配图、种子罐装配图、工艺管道及仪表流程图、厂房车间布置图、物料流程图和设备一览表。 关键词 ：碱性蛋白酶，发酵，工艺设计 I The process design of the Alkali protease with the capacity of 2200 tons annually Abstract This is a process design about the Alkali protease, which can produce 2200 tons annually. Alkali protease, produced by biosynthesis, is mainly used to enzyme-containing detergent , usually widely used to process hides, silk, pharmacy, forage, foodstuff and environmental protection. Fristly, according to the technical data, we selected flow of the Alkali protease fermentation. Then, we determined that 100m3fermentor units 3 and 10m3 seed pot units 1 are needed by the law of mass conservation of water, aseptic air, stream and so on, by the law of energy conservative. Secondly, we calculated and selected the main professional equipmentand equipment type, containing the structure sizes, cooling equipment, gearing equipmentand so on. According to the design reqirement, we also confirned the other equipmentwhich are used in the fermentative equipment, and optimized control in fermentative production. Finally, we completed the fermentative plant workshop layout, the corresponding public works, security, hygiene and environmental protection technology and otheraids.
