• Generally speaking , Chinese food is divided into eight styles , which is known as Eight regional Cuisines(八大菜系).These cuisines are Anhui cuisine 、 Hunan cuisine、 Shandong cuisine 、 Sichuan cuisine 、Cantonese cuisine、Fujian cuisine 、Zhejiang cuisine、Jiangsu cuisine.

• Feature:It’s evolved(逐步形成) from the dishes of xiangjiang
river,dongting lake and western Hunan mountain.It features a wide range of materials.And it ’s famous for its sour and spice.

Shandong cuisine
• Feature: After Song dynasty,shandong cuisine
had become the representative of the “northern food” .At Ming and Qing dynasty, Shandong cuisine had become the main imperial dishes(宫廷 菜) .It had a great impact on Beijing, Tianjin and northeastern foods. Today’s Shandong cuisine evolved from Jinan and Jiaodong’s local dishes.It’s famous for its freshness and pure taste.
Sichuan cuisine
• In the late Qin and early Han Dynasty had roughly formed a scale(规模). In Tang and Song dynasty it developed fast. And in Ming and Qing dynasty ,it had been full of fame. Cantonese cuisine
• From western han dynasty there was the record (记载) of cantonese cuisine,Ming and Qing dynasty,with the trade to the foreign countries,it also influenced by the western foods.Cantonese cuisine is based on Guangzhou, Chaozhou and Dongjiang dishes.It is famous for its wild animals , such as cooking snakes,dogs,cats and so on.
