T he n fluence o f the pH value o f alm ond gum so lut on on the rheo log ca l propert es w as s gn f cant. T he shear stress of alm ond gum ncreased w th the shear rate ncrease n ac d env ronm ent, and the chang ng range of the shear stress also ncreased, therefore Y - ax s n scatter d agram show ed an up turned trend w th X - ax s ncrease. H ow ever, w th the decrease o f ac d ty, the change of Y - ax s show ed a gradualw eaken ng trend, approach ng l near grow th.
