硕士f艺ci}`戈. 经济收入对成人膳食结构和营养状况 影响的动态研究 摘 要 本研究采用多阶段分层整群抽样的方法，于 1997年对湖南省 长沙市和沉陵县进行了调查，并将 493名成人的经济收入水平、膳 食和体质状况与;99:年的调查结果进行比较分析。酷果表明:① 随着经济收入的提高，两地居民谷类食物摄入量下降，动物性食物 摄入量上升 (p0.05);②蛋白质、脂肪、钙、铁、视黄醇当量、 核黄素等营养素均随经济收入水平的提高而摄入增加 (p0.05), 钙、视黄醇当量、核黄素的缺乏在中、低收入水平人群中仍相当严 重;③在高、中收入人群碳水化合物热比低于60%，脂肪热能比超 过30%,④随经济收入水平的提高，超重和肥胖 (BMI25)人群 增多，尤见于城市夕一丽对两地的比较发现，长沙市和沉陵县食物 构成差别较大，反映了地区之间的不平衡性。研究结果提示，在经 济收入增长较快的同时，城乡居民膳食结构正处于转型过程中，并 存在营养不平衡现象，应及时采取有效措施，积极推行 “中国居民 膳食指南”，改善居民营养和健康状况。 关键词: 经济收入水平 膳食结构 营养状况 成人 91剪医科丈学 颐士学游ig戈户 Dynamicstudyoninfluenceofincomelevel ondietarypattern andnutrition ofadult Abstract Thisstudyadoptedthemultistagestratifiedrandom cluster sampling.ThesurveyofChangshacityandYuanlingcountyofHunan Provincewascarriedin1997.Dietaryandphysicalstatusof493adults livingindifferentincomelevelcomparetothefirstsurveyin1991 wereanalyzed.Theresultsshowedasfollowed:①Thechangesin dietarypatternflooringtheeconomicdevelopment.Withtheincome increasing,theenergyandproteinsuppliedfromcerealsdecreases andtheproteinandfatsuppliedfromanimalfoodsincreases.②.The intakeofprotein,fat,calcium,Iron,retinalEQandriboflavinincreased from 1991to1997.Inadequateintakesofcalcium,VitaminAand riboflavinarecommonlyseen.③Thefatenergyreachedmorethan 30%ofthetotalinhighandmiddle-incomegroup.④ Withthe economiclevelbeingraised,thenumberofpeoplewithoverweightor obesity(BMI)25)wentup.Inversely,Thepartofmalnutrition (BMI18.5)increasedinlow-incomegroupofYuanlingcounty.There wasasignificantdifference(P0.05)betweenChangShainhabitants andYuanlinginhabitants.Itwasconcludedthatthenutritiontransition wastakingplaceinurbanandruralhouseholdswiththeeconomic rapidlydevelopment,andnutritionunbalanceoccurred.Soweshould takeeffectivem
