胡萝卜-甜橙复合果汁乳饮料的工艺设计毕业设计
摘 要
在各种饮料中,乳饮料独树一帜,它在解渴的同时,还添加了牛乳,是一种营养丰富风味独特的新型饮料。制作乳饮料的胡萝卜营养丰富,有治疗夜盲症、保护呼吸道和促进儿童生长等功能。此外还含较多的钙、磷、铁等矿物质。科学表明,经常食用胡萝卜不仅益肝明目,利膈宽肠,而且可健脾除疳,增强免疫功能。胡萝卜降糖降脂,是糖尿病人、高血压、冠心病患者的食疗佳品。甜橙含有大量维生素C,可以达到美白和抗感冒的作用,长期食用还有抗癌功效。为充分利用胡萝卜和甜橙,开发研究胡萝卜-甜橙复合乳饮料。胡萝卜和橙子榨汁后,调制成复合果汁,再与鲜奶混匀制成复合奶,加入白砂糖和CMC-Na,经均质、杀菌和灌装等工序得成品。同时本实验对胡萝卜-甜橙复合乳饮料的最佳配方进行了探索,经多次调配后,得出最佳配方:胡萝卜汁与橙汁的比例为2:3,复合果汁加入量为45%,鲜奶加入量为45%,加糖量为10%,稳定剂CMC-Na用量为0.3%。成品呈浅红色,酸甜可口,粘度适中H值为3.84.1,糖度为l%,蛋白质≥.75%,脂肪≥.85%,总固形物≥l1%。

The Development of Compound Milk Beverage with Carrot and Sweet Orange
Abstract
In a variety of beverages, milk beverage is unique .Not only can it relieve thirst, but it is also added to milk, which has rich nutrition and unique flavor of the new drink. The nut- rition of the carrot is rich, it can treat night blindness, protect respiratory tract and promote childrens growth, and other functions. In addition, it with more calcium, phosphorus, iron and other minerals. Science shows that eating carrot frequently can not only profit live and clear vision , favor diaphragm and wide intestine, but also may be good for the spleen and to eliminate malnutrition, enhance immunologic function. The carrot falls the sugar and fat, which is the diabetic patient, hypertension, coronary disease patients nutritional and high quality foods. Sweet orange contains a lot of vitamin C, may achieve the whitening and the anti-colds function, long-term edible also has the anticancer treatment effect. In order to make full use of carrot and orange, the compound milk beverage with carrot and orange is developed. After being squeezed,carrot juice and orange juice are mixed with fresh milk,then added with granulated sugar and CMC-Na,and then get homogenized,sterilized and canned,the final product is produced.Its optimal ingredients are as the followings:the ratio of carrot juice to orange juice is 2:3,the amount of compound juice is 45%,the amount of fresh milk is 45%,the amount of sugar is 10%,the amount of stabiliza
