The storage fungi are the contact and parasitic bacteria after the beans are harvesed or in the production and storage process. These bacteria don’t require the high humidity, some dry bacteria can grow when the humidity is about RH65%, therefore, it is more dangerous and it is also the main source of bacteria which cause bean products mold. The enterprises that take up the bean product processing are mostly the small businesses and even small workshops which the mechanization is not high and the production environment is humble. The production workshops are not professional whether on the environment or on the processing of raw materials, so the pollution of food is serious. Such as the penicillium and aspergillus which can cause the corruption of bean obtain the rapid breeding.
Thus, the bean products are inevitably contact with the microbes from the plant to the production and processing. Therefore, in order to prevent the mildew and deterioration phenomenon of the bean products, in addition to keep dry in the production and storage environment, it is also very important to pay attention to the environmental health to reduce the amount of microbes.
3.2 The bad environment of the production and storage of bean products
The environment mainly includes the humidity, temperature and gas composition three aspects:
First of all, the bean products have very strict requirements on the water content of atmosphere, warehouse and workshop in the process of production and storage. It is also the important step of bean mold prevention.
The water requirements of different microorganisms are not identical, such as the bacteria and yeast have a high requirement on the water, but the mold has a low requirement for water, as long as the humidity reaches 65%, the dry mold can grow normally.
