摘 要
20Ramsden发现胶体尺寸的固体颗粒也可以稳定乳液.之后,Pickering对这种乳液体系开展了系统的研究工作,因而此类乳液又被称为Pickering乳状液.近年来,颗粒乳化剂因其在食品、采油、化妆品、医药、催化以及功能纳米材料制备等领域具有潜在应用前景而备受关注5天,也有研究采用响应面法进行分析,缩短水解时间为1天,增加淀粉纳米晶的收益率.然而,缩短水解时间后,制备得到的淀粉晶的乳化特性如何,现缺乏相应的研究.
因此,在本文中,以蜡质玉米淀粉为原料,通过改变酸浓度、水解时间、反应温度和淀粉浓度等四个对制备淀粉晶有影响的四个条件,进行单因素实验,在监控淀粉晶得率的同时,对淀粉晶的电位、粉末的接触角、晶体结构、表观形态进行表征.同时,采用该淀粉晶制备Pickering乳液,并对乳液的电位、粒径进行测定.最后,综合考虑淀粉晶的得率和乳化性能,找出制备乳化性能好的蜡质玉米淀粉晶体的适宜条件.

ABSTRACT
At the beginning of the 20th century, Ramsden found that solid particles of colloidal size can also stabilize the emulsion. And then, Pickering started to carry out research work for emulsion system, which is also known as Pickering emulsions. In recent years, emulsifier particles have been concerned in food, oil, cosmetics, pharmaceuticals, catalysis preparation of functional nanomaterials and other areas which have potential applications. Starch nanoparticles which are prepared by acid hydrolysis of starch are renewable, inexpensive, and have good biological safety, biocompatibility and biodegradability, so it is applied to a number of areas including the field of medicine. At present, the common method is sulfuric acid hydrolysis for five days. Besides, previous study optimized the starch nanocrystals-containing suspension yield, rather than the starch nanocrystals yield, limited preparation time (to 1 day) and increased the yield of starch nanocrystals assessed after filtration. However, it is lack of appropriate research now about emulsifying properties of starch crystals after shortening hydrolysis time.
As a result, in this paper, waxy maize starch was used as raw material. A range of parameters affecting the preparation of starch nanocrystals including acid concentration, hydrolysis time, temperature and starch concentration were investigated to determine the starch nanocrystals prepared co
