２０17 年 4 月 食品研究与开发 第 38 卷第 7 期 Ｆood Research And Development 营养保健 168 DOI ：10.3969/j .issn.1005-6521.2017.07.037 红景天运动食品研发及其抗高原运动疲劳研究 尤伟 （西京学院 ，陕西 西安 7 10 123 ） 摘 要 ： 采用红景天为原料 ，制备一种富含红景天提取物的运动食品 ，预防并缓解高原运动性疲劳。研 究结果发现 ，小 鼠骨骼肌细胞 中抗疲劳相关的细胞通路均被激活，其相关蛋 白的表达水平均显著 高于对照组（P0.05 ），证 实红景天提 取物在细胞水平表现 出抗疲劳功效 ；人类 自愿者高原运动试验证 实，试验组运动相关指标和疲劳相关生化指标均显著 高于对照组人 员（P0.05 ），并且未发生任何不 良反应事件 。证 实红景天运动食品具有有效的抗 高原疲劳功效 ，具有一定 应用价值。 关键词 ： 红景天提取物 ；高原运动 ；运动食品 ；细胞模型 Research on Development of Rhodiola Sport Food and the Effect of Antifatigue of Plateau Sport YOU Wei （Xijing University ， Xi′an 7 10 123 ， Shaanxi ， China ） Ａｂｓｔｒａｃｔ ： Rhodiola was used as raw material to prepare a diet rich in rhodiola extract ， which was applied to prevent and relieve the fatigue of plateau sport. The results showed that the anti -fatigue related cellular path－ ways were activatedin mouse skeletal muscle cells ， and the expression of related proteins was significantly high－ er than that in the control group （P0.05 ）. It was confirmed that the extract of rhodiola had obvious anti-altitude exercise fatigue effect at the cellular level.Human volunteers plateau motion experiments confirmed that the ex－ ercise -related indexes and fatigue -related biochemical indexes in the experimental group were significantly higher than those in the control group （P 0.05 ）， and no adverse events were observed. These results showed that rhodiola was effective in anti-plateau fatigue and had certain application value.
