Energy matching for fish cold processing

Abstract : Ba ed on a dynamic characteri tic of heat tran fer in fi h cold proce ing, with the objective function of
the cold proce ing time, the relation hip among freezing rate, freezer temperature, air velocity, f i h category and
f i h ize were analyzed and tudied, according to a nonunique character of f i h thermophy ical propertie . It
pointed out that it i fea ible to con ider the amount of heat relea ed in the zone of maximum cry tallization a a
major foundation for matching refrigeration capacity, and to calculate product load with threetage method
in tead of enthalpy diff erence method. A method wa put forward to match energy by changing air velocity in
time and to maintain freezer temperature teadying according to diff erent f i h propertie o that it can ave energy
on the precondition of maintaining e ential freezing rate and pledging frozen product quality.
