12 6 2011, Vol. 32, No. 03 食品科学 ※生物工程 有机和常规红提葡萄附生菌的比较分析 刘万振,武婷婷,生吉萍,申 琳* (中国农业大学食品科学与营养工程学院,北京 100083) 摘 要:以伊犁金山葡萄庄园的红提葡萄为原料,通过比较常规葡萄和有机葡萄不同器官表面附生菌群的差异,旨 在揭示常规和有机两种不同栽培模式对葡萄附生菌群的影响。葡萄附生菌的分离、筛选方法为平板培养法,微生 5 2 物的计数方法为最大或然数法。结果显示:葡萄根部附生菌的群落总数最大( 10 CFU/mm ) ,茎次之,果实最小 2 2 (约10 CFU/mm ) 。在果实上,有机葡萄附生真菌种类多于常规葡萄,而附生细菌种类与之相反。除葡萄叶没有 显著差异外,有机葡萄各器官( 根、茎、果实) 附生菌菌落总数均大于常规葡萄。初步表明,有机栽培可以更好 地保持生态环境中微生物群落的生物多样性。 关键词:红提葡萄;有机食品;附生菌;食品安全 Comparative Analysis of Epiphyte between Organic and Common Red Globe Grapes LIU Wan-zhen ,WU Ting-ting ,SHENG Ji-ping ,SHEN Lin * (College of Food Science and Nutritional Engineering, China Agricultural University, Beij ing 100083, China) Abstract:Both organic and conventional red globe grape were sampled from Jinshan vineyard in Yili. The effect of different farming models of conventional and organic farming models on the epiphyte distribution w as studied preliminarily in current p aper by comparin g the epiphytic b iodiversity in grape organ s. The agar-plate culture method was u sed for the microbial isolation , and the most-probab le-number (MPN ) was u sed for the enum eration of epiphyte population . The 5 2 result was as follows: the largest number of epiphytes located on the root (up to 10 CFU/mm ), and the stem took second 2 2 place, and the smallest on fruit (about 10 CFU/mm ).
