Department of Tea Science ，Zhejiang University ，Hangzhou 310029 ，Zhejiang ，China ） Abstract ：This study investigated the antioxidant ability of acylated lipid–soluble tea polyphenol in lipids. The results showed that the tea polyphenol with long carbon chain through acylation has good hydrophilicity and excellent oxidation resistance. The product has higher antioxidant activity than BHT and the lipid has good antioxidant effect with adding 200 ppm of the product. The lipid– soluble tea polyphenol can effectively delay lipid peroxidation in camellia oil ，soybean oil ，import grape seed oil ， olive oil and tea seed oil.
