Production of organic acids of SJ-20 were increased by 45% than the original strain. The strain was applied to luzhou-flavor liquor ferment, then increased the yield of acid ester compounds content in wine ,for example caproic acid and ethyl caproate, so highlighted the typicality of Luzhou-flavor liquor .
