精品 精品 精品 论文题目： 复合添加三种天然抑菌剂的乳清蛋白膜抑菌效果的研究 学院及专业：食品与生物工程学院 食科 本 科 生： 指导教师： 摘 要 乳清蛋白具有良好的营养特性以及成膜的能力，它可以形成透明、柔软、有弹性、不溶于水的薄膜，且具有优良的氧气、芳香物质和油脂的阻隔性。本研究以乳清浓缩蛋白（WPC80）为主要成膜物质，通过添加天然抑菌剂制成乳清蛋白抗菌膜。 先测定nisin、丁香精油和纳他霉素的最小抑菌浓度，再与乳清蛋白溶液复合，通过单因素试验，以抑菌圈的大小为测定指标研究复合膜的抑菌效果。最后将三种抑菌剂和乳清蛋白溶液复合，通过正交试验，仍以抑菌圈的大小为测定指标确定三种天然抑菌剂的最佳加入量。研究表明：当Nisin、丁香精油和纳他霉素联合作用时，复合膜的抑菌效果较单独使用时显著增强。300IU/ml Nisin、1.5%丁香精油和60ppm的纳他霉素三者联合作用效果显著强于其他八组。乳清蛋白复合抗菌膜三种抑菌剂的最佳加入量为：Nisin 300IU/ml、纳他霉素60ppm、丁香精油1.5% 。 关键词： 乳清蛋白 抗菌膜 抑菌性； 精品 Subject: Study on the antimicrobial properties of edible whey protein composite film supplemented with three natural antibacterial agents College and Specialty: College of Food Bioengineering Food Science Engineering Name: Supervisor: ABSTRACT Whey protein, which has good nutritional properties, as well as the ability of film, can form a transparent, bland, flexible，insolubility films and possess excellent oxygen, aroma and lipid barrier properties. In this paper, it takes WPC80 as the main film-forming material to make whey protein natural anti-bacterial film by addition of natural antimicrobial agents. First determinating the minimum inhibitory concentration of nisin, natamycin , clove essential oils , and then combined with the whey protein solution, last determination of the antibacterial effect of composite films through single factor test taking the size of inhibition zone as index . Finally, combining three kinds of antimicrobial agents and whey protein solution and determining the best dosage of the three kinds of antimicrobial agents through orthogonal test, still taking the size of inhibition zone as indicator .The results show that: the effects of the composite membrane significantly enhanced when Nisin, Natamycin clove essential oils are combined compared the antibacterial effect of when they used alone.
