Unit 4 Food and beverage service Unit 4 food and beverage service Unit 4 food and beverage service A typical Chinese greeting is “Have you eaten?” indicating just how important Chinese people consider the whole dining experience. Believed to be one of the most famous cuisines in the world, a Chinese meal will surely give you a memorable experience. What to eat in China? Chinese cuisine is just as varied as its landscape. It is often referred to in terms of regions because of the different geographic, cultural, climatic, and economic conditions. Generally speaking, in the south, where water is abundant, rice is the staple food, while in the north, the staple grain is wheat, so steamed bread, dumplings and noodles are very common. In China there are eight main regional cuisines, of which the most famous are Lu cuisine in Shandong Province, where seafood delicacies are highly prized; Sichuan cuisine in Sichuan Province, which boasts “hundreds of flavors for hundreds of dishes”, and which is famously hot and spicy; and Cantonese cuisine in Guangdong Province, where cooks pride themselves as being able to make a delicious meal from any ingredients. Where to eat in China? Some of the best food is provided in famous brand-name restaurants, some of which are over a hundred years old like the “Quanjude” in Beijing, where the famous Beijing Roast Duck is served. Dining in such a time-honored restaurant is like tasting a part of history. Most of the starrated hotels also have excellent restaurants, often specializing in particular regional cuisines, and usually, nowadays, boasting a Western restaurant as well. Besides these excellent restaurants, food in family-run establishments is much cheaper but still delicious and every town in China has plenty of small, cheap, “hole-in-the-wall” dining options.
