柿叶茶营养成分分析

Abstract The contents of water, total ash, protein, free amino acids, vitamin C, carotenoids, fl avonoids, polyphenols and tea
polysaccharide in persimmon leaves tea were analyzed one by one. The same components in the ordinary green tea, regular
black tea, jasmine tea were compared with persimmon leaves tea. The results showed that the persimmon leaves tea contained
2.51% of water, 11.63% of total ash, 12.84% of protein, 27.82 mg/100g of total free amino acid, 306.01 mg/100g of vitamin
C, 24.23mg/100g of carotenoids, 8.29 mg/g of total fl avonoids, 5.06% of tea polyphenols, 1.15% of tea polysaccharide. Being
compared with the other tea, the results showed that: the nutrients were comprehensive in persimmon leaves tea; especially
vitamin C content is much higher than the other teas, so the persimmon leaves tea was higher notional value.
