㈣Y ㈣Y 川i1 ㈣8 Ⅲ2 删0 ㈣8 川 1 呲m1 ABSTRACT Alcohol，is rather an essential item than a necessity of daily life．It has the natural attributes as well as the cultural property,and is the study object of both natural science and social science．Although there were plenty of books and papers which studied on the culture of alcohol of minorities， few of them researched into their traditional brewing technology and the culture related．The traditonal brewing technology and culture are confronted with the challenge from modem alcohol industry,and the public concepts of the traditonal brewing technology are always changing with the transformation of social economy and culture．Therefore，as an important part of material production intraditonal society,the tradition of alcohol brewing is suffering from its heritage difficulties． This paper attempts to study from the perspective of traditional brewing technology and culture，use the materials aquired from field work to write ethnography of the existing brewing traditon in Luoda Village，Diebu County,Gansu Province．At the same time，by the analysis of functions of the alcohol culture in Luoda Village，it tries to explore the social basis and folk psychology and their significance in the heritage of traditional brewing technology． The paper starts from the natural environment and history of Luoda Village to describe the material basis and the evolution of traditioal HanbreWing Han breWing culture under the influence of both Tibetan culture and Culmre．Then，it analyses the function and status of alcohol in folk life to discuss the social and culture space which the tradition brewing culture d印ends on．According to the interviews with villagers and the author’s personal experience and observation，the paper strives to faithfully record the whole brewing process of Luoda Village and valuable technical the experie。nces of its people in Chapter Three．At last，this paper studies changing factors of natural environment，traditional livelihoods，socia
