前 言
在我国经济社会发展中,作为独立市场竞争主体的酒店餐饮已经成为我国第三产业重要的组成部分,在各个领域的经济全球化不断深化的今天,迫使酒店餐饮行业必须从全新的市场经济观念重新审视企业发展策略,谁能够在新的竞争环境中更好的掌控和驾驭“餐饮成本标准化管理”这条主线,谁就能获得更好的经济效益,塑造强势发展能力,但是,现在酒店大多数餐饮管理人员把大部分的精力用于餐饮经营,对于食品生产销售的成本控制较少关注。一些饭店尽管顾客盈门,但其食品成本极高,利润收益较低,许多大型饭店、宾馆由于疏于成本控制而连续亏损,仍未能很好的理解和掌控“餐饮成本控制标准化”,极大阻碍了餐饮企业竞争力的提升,同时,即便很好的做到了“餐饮成本标准化管理”,但是控制过于死板,会造成企业员工失
