热带亚热带植物学报　2012 ，20(6) ：571~577 Journal of Tropical and Subtropical Botany 闽产李果实氨基酸组成及其营养分析 颜孙安, 钱爱萍, 姚清华, 林香信, 林虬* (福建省农业科学院中心实验室，福建省精密仪器农业测试重点实验室，福州 350003) 摘要： 为了弄清闽产李(Prunus salicina)果实的氨基酸含量 、组成及营养价值 ，采用氨基酸 自动分析仪对李果实的各种氨基酸含 量进行 了检测和 比较分析 。结果表 明，李果实含有 18 种蛋 白质氨基酸和 3 种非蛋 白质氨基酸。‘田黄 ’李 的牛磺酸含量与蛋 白 质氨基酸含量均最高 ，分别为 26.54 mg (100 g)-1 和 496.14 mg (100 g)-1 ；‘皇后 ’李 的鸟氨酸、药用氨基酸、酸味氨基酸含量 以及特 殊功效蛋 白质氨基酸的比例均最高 ，分别为 0.36 mg (100 g)-1、364.67 mg (100 g)-1、298.28 mg (100 g)-1 和 73.45% ；早熟 ‘胭脂 ’ -1 -1 李 的 γ- 氨基丁酸含量最高 ，为 7.98 mg (100 g) ；‘大胭脂 ’李 的支链氨基酸含量最高 ，为 46.77 mg (100 g) 。李果实 中的氨基酸 种类齐全 ，含量存在一定 的差异 ，具有很大的开发利用价值 。 关键词： 闽；李 ；蛋 白质氨基酸 ；非蛋 白质氨基酸 doi: 10.3969/j .issn.1005–3395.2012.06.006 Amino Acid Composition and Nutrition Alaysis of Plum Fruits in Fujian Province * YAN Sun-an, QIAN Ai-ping, YAO Qing-hua, LIN Xiang-xin, LIN Qiu (Central Laboratory of Fujian Academy of Agricultural Sciences, Fujian Key Laboratory of Precision Measurement of Agricultural Sciences, Fuzhou 350003, China) Abstract: In order to understand the nutrition value of plum (Prunus salicina) fruits from Fujian, the contents and composition of amino acids were determined by amino acid analyzer.
