热带亚热带植物学报 2012 ,20(6) :571~577 Journal of Tropical and Subtropical Botany 闽产李果实氨基酸组成及其营养分析 颜孙安, 钱爱萍, 姚清华, 林香信, 林虬* (福建省农业科学院中心实验室,福建省精密仪器农业测试重点实验室,福州 350003) 摘要: 为了弄清闽产李(Prunus salicina)果实的氨基酸含量 、组成及营养价值 ,采用氨基酸 自动分析仪对李果实的各种氨基酸含 量进行 了检测和 比较分析 。结果表 明,李果实含有 18 种蛋 白质氨基酸和 3 种非蛋 白质氨基酸。‘田黄 ’李 的牛磺酸含量与蛋 白 质氨基酸含量均最高 ,分别为 26.54 mg (100 g)-1 和 496.14 mg (100 g)-1 ;‘皇后 ’李 的鸟氨酸、药用氨基酸、酸味氨基酸含量 以及特 殊功效蛋 白质氨基酸的比例均最高 ,分别为 0.36 mg (100 g)-1、364.67 mg (100 g)-1、298.28 mg (100 g)-1 和 73.45% ;早熟 ‘胭脂 ’ -1 -1 李 的 γ- 氨基丁酸含量最高 ,为 7.98 mg (100 g) ;‘大胭脂 ’李 的支链氨基酸含量最高 ,为 46.77 mg (100 g) 。李果实 中的氨基酸 种类齐全 ,含量存在一定 的差异 ,具有很大的开发利用价值 。 关键词: 闽;李 ;蛋 白质氨基酸 ;非蛋 白质氨基酸 doi: 10.3969/j .issn.1005–3395.2012.06.006 Amino Acid Composition and Nutrition Alaysis of Plum Fruits in Fujian Province * YAN Sun-an, QIAN Ai-ping, YAO Qing-hua, LIN Xiang-xin, LIN Qiu (Central Laboratory of Fujian Academy of Agricultural Sciences, Fujian Key Laboratory of Precision Measurement of Agricultural Sciences, Fuzhou 350003, China) Abstract: In order to understand the nutrition value of plum (Prunus salicina) fruits from Fujian, the contents and composition of amino acids were determined by amino acid analyzer. The results showed that there were 18 protein amino acids and 3 non-protein amino acids in plum fruits. Taurine and protein amino acid contents in ‘Tianhuang’ plum fruits were the highest, accounting for 26.54 mg (100 g)-1 and 496.14 mg (100 g)-1, respectively. The contents of ornithine, medicinal amino acid, sour amino acid in ‘American Plums Queen’ were the highest, accounting for 0.36 mg (100 g)-1, 364.67 mg (100 g)-1, and 298.28 mg (100 g)-1, respectively.
