Directions Peel the carrot and wash the cucumbers. Slice everything into approximately 2 inch lengths by1/4 inch thickness. Put into a large bowl with salt and shake. Let stand for at least l/2 hour. Removesqueezed water until dry as possible. Place one of the ginger slices on bottom. Pack the vegetablesinto your pickling jar. Put the other ginger slices on top. Mix the sugar into the vinegar in a bowl andshake until the sugar is melted. Pour over the vegetables until covered. Pour in a bit more vinegar totop up if necessary.
