458 2008, Vol. 29, No. 09 食品科学 ※分析检测 1 1,2, 1 唐 婧 ，杨秀培 * ，史兵方 (1.西华师范大学化学化工学院，四川 南充 637002 ；2. 四川大学化学学院，四川 成都 610064) 摘 要：建立了简便、快速测定油条中丙烯酰胺的检测方法。样品经乙腈提取，PSA 吸附剂分散净化后以气 相色谱测定。结果表明，丙烯酰胺在 0.05 ～5.0 μg/ml 浓度范围内线性关系良好，相关系数 r =0.9993 ，检测限 0.017μg/ml ，加标回收率在90.5%～98.2% ，相对标准偏差(RSD)为 1.8%～4.2% 。可见，该方法具有操作简单、 灵敏度高、定量准确可靠等特点，适用于油条等油炸食品中丙烯酰胺的测定。 关键词：Q u E C h E R S ；气相色谱法；油条；丙烯酰胺 Rapid Determination of Acrylamide in Fried Bread Stick by QuEChERS Cleanup and Gas Chromatography 1 1,2, 1 TANG Jing ，YANG Xiu-pei *，SHI Bing-fang (1. College of Chemistry, Sichuan University, Chengdu 610064，China) Abstract: A simple and rapid method for the determination of acrylamide in fried bread stick was developed. Samples were analyzed by gas chromatography after being extracted with acetonitrile and being cleaned up by dispersive solid phase extraction using primary secondary amine (PSA). The results showed that there is a good linear relation ship ( r =0.9993) in the concentration range of 0.05～5.0 μg/ml with the limit of detection (LOD) of 0.017 ship μg/ml. The recoveries of acrylamide in the fried bread stick samples are all in the range of 90.5 ％ to 98.2 ％, with relative standard deviation of 1.8%～4.2%. The method is simple, accurate, and sensitive for the determination of acrylamide in fried bread stick. Key words: QuEChERS ； GC(gas chrom
