LPS诱导的慢性免疫应激对肉仔鸡肉品质的影响

摘 要:细菌脂多糖(Lipopolysaccharide,简称LPS)是存在于革兰氏阴性菌细胞壁外膜中的致病成分。本试验利用LPS诱导慢性免疫应激,研究长期注射不同剂量细菌脂多糖对肉仔鸡肉品质和脂质代谢的影响。40只体重相近的21日龄肉仔鸡随机分为4组,饲喂基础日粮和添加维生素C(400mg/kg)的基础日粮,其中每个日粮组分别自28日龄开始隔日经腹腔注射LPS生理盐水稀释液,试验期14天,对照组注射等量生理盐水。42日龄称重,取试鸡血液制备血浆,测定血浆皮质酮、肿瘤坏死因子和丙二醛的含量;取胸肌和腿肌,测定丙二醛、pH、滴水损失、肌纤维束面积、肌内脂肪、腹脂率。结果表明:(1)LPS处理显著降低了肉仔鸡的平均日增重(P0.05)(2)LPS处理与对照组相比,显著提高皮质酮、肿瘤坏死因子水平(P0.05);显著降低胸肌、腿肌pH(P0.05),提高腿肌滴水损失(P0.05),提高胸肌和腿肌的肌纤维束面积(P0.05),提高腹脂率(P0.05)。(3)LPS处理也显著提高了血浆和胸肌脂质过氧化产物水平(P0.05)。

Effect of hronic Immune Stress Induced by LPS on Meat Quality of Broilers

(Feed Research Institute of Chinese Academy of Agricultural ScienceBeijing, 100081)Abstract: Lipopolysaccharide (LPS) is nosogenesis which exists in cell wall’s ectoblast of G- bacteria. LPS was used to induce chronic immunological stress in order to investigate the effect of LPS on meat quality and fat metabolism of broiler. Forty 21-day-old broilers with similar body weight were randomly assigned to four groups. Two groups were fed basal diets, and others were fed basal diets with 400mg/kg Vitamin C. From 28-day-old, one of the groups fed same diet was injected intraperitoneally with LPS every 2 day for 14d,and another was injected with saline. At 42-day-old, blood of every bird was collected for testing the content of MDA,Corticosterone and TNF-α. Then all birds were killed to sample breast meat, leg meat and measure abdominal fat weight. MDA, pH, drip loss, intramuscular fat and area of muscle fasciculus cross section were examined. The result showed that (1) LPS treatment decreased growth rate of broilers, increased corticosterone and TNF-α level in plasma significantly (P0.05); (2) LPS stimulus resulted in increase of drip lose of leg meat and area of muscle fasciculus cross section of leg and breast meat. while decrease of pH of leg and breast
