昆 明 学 院 2013 届毕业设计（论文） 设计（论文）题目 肉食品中住肉孢子虫的检测方法探索 姓 名 李红飞 学 号 201022160106 所 属 系 农学院 专业年级 绿色食品生产与检验 指导教师 2013 年 5 月 摘 要 住肉孢子虫（Sarcocystis）是一类人畜共患的寄生原虫，主要寄生在宿主的各类肌肉组织中，其宿主范围很广，包括哺乳类、鸟类、爬虫类以及鱼类。在马、牛、山羊、绵羊、猪、骆驼等家畜以及鸡体内均有不同种类的住肉孢子虫寄生，人也可以被感染。住肉孢子虫寄生在宿主体内可使人、畜、禽等产生住肉孢子虫病，并对其健康造成很大影响，因不断产生代谢废物等也会对肉食品的质量造成不同程度的影响。但目前人们对住肉孢子虫的认识还不普及，更对住肉孢子虫可能对肉类食品乃至人体造成的危害缺乏认识。因此，开展此类研究是有重要意义的。由于住肉孢子虫是寄生原虫且虫体微小，又寄生在宿主的肌肉等组织中而不易被发现，传统检验方法要借助于显微镜等设备在实验室内完成。本实验在传统检验方法的基础上加以改进，以期获得更简单易行的检验方法，为肉食品中的住肉孢子虫检测和保障肉食品安全、优质提供资料和方法支持。此类研究在部分地区存在吃生肉习俗的云南省，就显得更加重要而有意义。 关键词：住肉孢子虫； 危害； 检验方法； 肉食品安全； Abstract Sarcocystis (generic name) is a zoonotic parasitic protozoa, mainly parasitic host various types of muscle tissue, a very wide host range, including mammals, birds, reptiles and fish.
