蚕蛹蛋白的脱臭脱色研究

摘 要:蚕蛹营养价值极高,但由于其强烈的异味,尚未被很好的开发应用,为了深度开发利用蚕
蛹,讨探蚕蛹蛋白的脱臭脱色方法。首先用乙醚从干蚕蛹 提取蛹油得到脱脂蛹,将脱脂蛹粉碎后
经水洗,加入0.25mol/L 的NaOH 溶液,在50℃条件下搅拌5h 抽提蛹蛋白,得到蛋白提取液,在
提取液 分别加入β-环糊精、粉末状活性炭及一种特殊的脱臭脱色剂进行蚕蛹蛋白的脱臭脱色处
理,研究各种脱臭脱色剂的最佳脱臭脱色条件,结果表明:在20mL 蛋白质质量浓度为3.5mg/mL 的
蚕蛹蛋白提取液 加入 β-环糊精3g、35℃处理30min,蚕蛹蛋白基本无臭,蛋白保留率超过100%,
无脱色效果,脱色剂很难从蛹蛋白 分离;加入经活化处理的粉末状活性炭5g、65℃处理45min,
蚕蛹蛋白基本无臭,蛋白保留率达 85%,脱色率达 68%,粉末状活性炭很难从蛋白液 分离,即使
在 12000r/min 的高速离心下也难以彻底除尽;加入特殊脱臭脱色剂在一定条件下处理,蚕蛹蛋白
基本无臭味,蛋白保留率达 83%,脱色率达 68%,脱臭脱色剂很容易与蚕蛹蛋白分离,而且可重复
利用。将经脱臭脱色处理后的蚕蛹蛋白液pH 值调节至等电点3.5-4.5,静置8h 后过滤、水洗除盐,
干燥后得到淡黄色无臭蛹蛋白。本研究为制备无臭无色蚕蛹蛋白提供了一种新的方法。

Deodorization and Decolorization of Silkworm Pupae Protein

Abstract: Altough nutrient values of silkworm pupae were very high, it still wasn’t been well utilized
because of its strong bad odors. To deeply use silkworm pupae, the methods of deodorization and
decolorization were studied. Degreesed pupaes were made by extracting pupae oil with aether from dried
silkworm puape, then pounded into powder and washed with water. Pupae protein extraction were exctracted
with 0.25mol/L NaOH in the conditions of 50 ℃, stirring for 5h. Silkworm pupae protein were treated
with three kinds of agents, β- cyclodextrin, activated carbon and a kind of special discolored agent .
The optimum conditions of deodorization and decolorization of different agents were studied. Three kinds
of agents of deodorization and decolorization were put into 20mL silkworm pupae protein extration with
protein mass concentration of 3.5mg/mL . The silkworm pupoae protein was almost smell-less , protein
