大理白族的茶礼茶俗 康冠宏，谭正新，李亚莉，薛志强，郑慕蓉，杨妍柯，周红杰 （云南农业大学，云南昆明 650201 ） 摘要:采用文献整理、人物访谈、问卷调查和实地调查等研究方法，对大理白族的茶礼茶俗进行调查和整理，分 析讨论白族传统茶礼茶俗在时代发展、社会进步中的流变，为民族传统茶文化的承传和发扬探索新的途径。研究 显示：白族人的生活与茶密切相关，白族人在出生、婚嫁、建房、丧葬、祭祀、社交以及节庆中都流传下了丰富 的用茶礼仪；并且白族人在日常生活、劳动过程中创造出三道茶、烤茶（罐罐茶）、刨花茶、水土茶、红糖茶、 姜茶、盐巴茶、糊米茶、薄荷茶、谢客茶、药茶等多样的饮茶习俗。这些珍贵的白族茶文化不但丰富了云南少数 民族茶文化的内容，同时也带动了白族茶文化的经济发展。 关键词:茶学；大理白族；茶文化；茶礼茶俗 The Tea Etiquette and Customs of the Bai Nationality in Dali KANG Guanhong, TAN Zhengxin, LI Yali, XUE Zhiqiang, ZHENG Murong, YANG Yanke, ZHOU Hongjie (College of Pu-erh Tea, Yunnan Agricultural University, Kunming Yunnan, 650201, China) Abstract: the traditional tea etiquette and customs of the Bai Nationality living in Dali, Yunnan province were investigated in this paper as the evolution, research was carried out and data were collected by means of literature collection, questionnaire, interviews, and field surveys. The Bai Nationality’s tea etiquette and customs analyzed with the development of social progress, new approaches were searched for inheriting traditional tea culture and development. The research indicates that tea is closely related to the Bai Peoples life, which involved in birth, marriage, house construction, funeral and sacrifice, social intercourse, birth and festivals. Bai people creat diversitied tea-drinking customs, such as the Sandao Cha, Kaocha, Paohua Cha , Shuitu Cha, brown sugar tea, ginger tea, salt tea, paste rice tea, mint tea , Xieke Cha, herbal tea in daily life and the process of labor. These precious tea cultures of Bai Nationality enrich the contents of Yunnan national tea culture, and promote the economic growth of tea culture in the area of Bai People. K
