延 边 大 学 二 〇 一三 年 五 月摘 要 民以食为天，食以安为先。随着人们生活水平的日益提高，人们对食品的追求体现出多样化和丰富化，食品添加剂的应用正好满足了人们这一追求。自从行业中出现食品添加剂后，丰富多彩的食品随时随地的出现在我们面前。人们在享受美味的同时，更要关心食品的营养和安全，特别是食品安全问题。 随着食品工业和化学工业的发展，食品添加剂的种类和数量越来越多，原以为无害的食品添加剂，近几年，一些不良食品企业对食品添加剂的超量、超限使用，使得国内食品安全问题频繁出现。再加上食品添加剂的不实报道，不仅让人们对食品添加剂产生妖魔化的印象，而且对食品安全事件心有余悸，食品安全问题成为了人们关注的热点。 本文以食品添加剂的背景、发展阶段、食品安全事件出发，首先，全面阐述食品添加剂的概念、种类、作用等基础上，对食品添加剂的使用方面进行分析，对食品添加剂使用和管理过程中存在的问题进行了研究，并针对性的提出了全面加强食品添加剂安全监管措施的建议和对策，使人们更进一步的认识食品添加剂的作用及食品生产加工企业对食品添加剂安全使用规范，保证消费者的健康。 关键字：食品添加剂；食品监管；食品安全；吹哨法案Abstract The food to Ann is first.
