Effects of Applying Different Static Loads During Storage on the Quality of Agaricus bisporus Fruit   South China, Guangdong Open Laboratory of Applied Technology,   Guangdong Institute of Microbiology,Guangzhou, Guangdong 510070, China   The effects of temperature, initial pH, carbon and nitrogen sources, and C∶N ratio on mycelial biomass and exopolysaccharide (EPS) production by Cordyceps guangdongensis grown in submerged culture were evaluated. Mycelial growth was optimal at 25 ℃, an initial pH range from 7.0 to 9.0, and with malt extract and soybean steep powder as the carbon and nitrogen sources, respectively. EPS production was maximal at 28 ℃, an initial pH range from 5.0 to 7.0, and with glucose and yeast extract as the carbon and nitrogen sources, respectively. Both biomass and EPS production were favored by a C∶N ratio of 12∶1. Orthogonal testing revealed the optimal medium for mycelial biomass production to consist of 30 g/L glucose, 30 g/L malt extract, 8 g/L soybean steep powder and 10 g/L yeast extract, and for EPS production to consist of 40 g/L glucose, 30 g/L malt extract, 10 g/L soybean steep powder and 10 g/L yeast extract. Cordyceps species have a long history of use as traditional folk medicines and functional foods for improving human health in several oriental countries. Cordyceps sinensis is considered an effective Chinese medicine for strengthening lung and kidney function, preventing bleeding and eliminating sputum[1], and various pharmacological effects associated with this fungus have been confirmed using modern techniques[24]. Methanol extracts of C. pruinosa mycelia inhibit inflammation mediators by suppressing NFB activation in vitro and in vivo[5, 6].
