                     贵州白香猪不同杂交组合后代屠宰性测定(贵州大学高原山地动物遗传育种与繁殖省部共建教育部重点实验室,贵州 贵阳 550025)摘  要:贵州白香猪作为母本,分别以大约克、杜洛克、长白猪作为父本进行杂交组合试验以贵州白香猪为对照组,对杂交香猪8月龄进行屠宰,分别对胴体性状、肉质性状和肌肉化学成分进行测定。结果表明,三个杂交组胴体长眼肌面积极显著高于对照组香猪 (P0.01),而香猪在大理石纹、肌内脂肪、蛋白质指标上显著高于各杂交组(P0.05)。此外,杜×香组肉色、滴水损失、剪切力显著小于其它组(P0.05),而失水率、水分显著高于其它组(P0.05),长×香组在胴体长、熟肉率指标上为各组中最高(P0.05),且其皮厚为各组最小(P0.05),而其它各项指标均较适中。×香杜×香关键词:贵州白香猪;杂交组合;屠宰性状

Abstract: Guizhou Bai Xiang pig was took as female parent and Yorkshire, Duroc, and Landrace were took as male parents in the cross combination experiment. Set Guizhou Bai Xiang pig as control group, the 3 Crossbred pigs and control group pigs of 8-month-olds were buthered, then testing the carcass traits, meat quality character, and meat chemical composition of those. The results showed that the length of carcass and the loin eye area of 3 hybrid progenies were very significantly higher than Xiang pig control group(P0.01), however, the marbling, intramuscular fat and protein content of Xiang pig control group were significantly higher than that of 3 hybrid progenies (P0.05). Besides, the meat color, drip loss, shearing force of Duroc×Xiang group were significantly lower than other groups(P0.05), and the lose water ratio, water content of Duroc×Xiang group were significantly higher than other groups(P0.05). The length of carcass and cooked meat ratio of Landrace×Xiang group were the highest and the thickness of skin was the lowest in the whole group(P0.05), and other indicators than those in moderate.
