Unit Two Seating the Guests When you arrive at most restaurant,you should not just go in and sit down-unless you see a sign saying Please seat yourself. Usually you will have to wait for a hostessor captainto escort you to a table. The table-seating plan must mark out smoking, non-smoking area and table numbers. 餐厅座位图必须是清晰的,并且一定要标有台号并划分出吸烟区/不吸烟区。利用座位图方便领位快速为客人找出可提供的座位,及时让客人用餐。 Procedures: Using the restaurant reservations book write each reservation onto the seating plan in a time order. Record any special requirements onto the sheet, including smoking/non smoking area, table request, private room request, cakes, baby chair etc. 根据预订本,只限用铅笔在座位图上标出有预订的餐台,并注明其特殊要求。如“儿童椅、特殊菜肴和预订蛋糕”等。 Allocate seating to guests requesting particular tables first, any tables with physically challenged guests, then those requiring larger groups, where tables need to be combined. Where tables must be joined, mark these on the floor plan. 根据客人的要求安排座位,遇到特殊的客人要给予特殊的照顾。 如果有团队客人拼台或其它要求要在台图上标注。 Try to allocate the guest arrival in different sections so that guests arriving at the same time, prevent the service personnel becoming overworked.
