For the development of agricultural areas should have three characteristics: proximity to rivers or lakes, settled in vast plains and having fertile lands. Under this context, agriculture in Central Mexico, in the study area, was initially developed in the Valley of Santiago. However, this area was not part of the route of the pro- ceedings of the New Spain, main cause which motivated the development of agriculture on the Valley of Celaya [2].
