Aristichthys nobilis muscle protein during frozen- storage

Abstract : The enaturation of myofibrillar protein of bighea carp (Aristichthys nobilis) uring frozen storage at
ifferent temperatures ( - 10 e , - 20 e , - 30 e an - 40 e ) was stu ie by measuring the solubility of
actomyosin, ATPase activities an - SH content of myofibrillar protein. The results in icate that the solubility
of actomyosin, ATPase activities an -SH content of myofibrillar protein ecrease as frozen storage progresse .
The temperature of frozen storage can significantly influence the rate of enaturation of myofibrillar protein ( P
0. 01) . The lower the frozen storage temperature, the slower the rate of enaturation of protein is.
