超声波技术在传统白酒工业生产中的应用

摘要：我国的传统白酒，生产工艺独特。是我国特有的民族传统蒸馏酒。但随着白酒工业技术改造的不断深
入，传统的发酵工艺已越来越难以满足现代工业化生产的需要。超声波是一种弹性机械振动波，是听觉阈以外
的一种振动波。已广泛地应用于工业、农业、医药卫生等领域。首先介绍了超声波技术其基本原理，接着重点介
绍了超声技术在我国传统白酒行业生产中如白酒生产发酵过程、白酒生产发酵参数在线测量、白酒老熟等中
的应用；最后，结合现有超声技术的研究现状及其前人在白酒生产中的部分应用成果，对超声波技术在传统白
酒工业中的应用方面提出了建设性的意见。
