Food Safety BSF Health Engineer Chen Wenhong January - 2005 Food-induced Diseases Definition: Diseases induced by infective and toxic substances which have entered into human bodies through foods. Food Safety Events Occurred at Home and Abroad The fulminant epidemic event of hepatitis A occurred in Shanghai in 1987, during which 300,000 people were infected with hepatitis A. 224,000 people were infected due to the pollution of ice cream caused by salmonellae in USA in 1997. In 1998, 2.2 million people (including 1.8 million children) died from diarrhea worldwide, the cause of death for most was pollution of food and/or drinking water. In Sept. 2003, 288 teachers and students of the Middle School for Nationalities in Jishou City, Hunan province were poisoned collectively due to unclean drinking water. In June 2004, a food poisoning event of 116 people in total happened in Beijing, of which 101 were poisoned in the dining rooms of some construction sites. Definitions of Acute Infection Poisoning Infection refers to a series of diseases due to the growth and reproduction of pathogenic microbes in a body; Poisoning refers to a series of diseases induced due to the intake of the foods that have been polluted by poisons. Estimations on Possible Occurrence of Acute complications Though the possibility of the occurrence of serious complications is still uncertain, it is estimated by the USFDA that 2 – 3% of the patients with food-induced diseases may develop secondary chronic diseases.
