槟榔青果品种间基本性状分析及果肉氨基酸营养评价 作者: 导师:摘 要槟榔主要生长于热带地区,是一种重要的经济作物,果实中含有多种营养成分,具有较高的食用价值,能够用作医药、保健品资源。海南是我国槟榔的主要产区,主要海南本地品种、台湾引进种以及人工繁育品种,例如“热研1号”。本文目的是对“热研1号”以及台湾种槟榔进行性状分析以及氨基酸营养评价。首先通过观察、测量、称重、以及口感调查等手段对两种槟榔进行性状分析。结果发现,“热研1号”果实较大,体积、重量均远大于台湾种,体内槟榔碱含量较高,不溶性膳食纤维较少,而且具有较好的口感,咀嚼性更强。进一步建立了高效液相色谱法,对槟榔所含氨基酸进行分析定量。结果发现两种槟榔所含氨基酸种类一致,均为14种氨基酸,其中有7种为必需氨基酸,经过分析“热研1号”所含氨基酸的质量更好。总之,“热研1号”槟榔果实更大、口感较好、营养价值高,是一种重要的植物资源,值得进一步推广开发。关键词:槟榔,性状,氨基酸,热研1号Basic traits analysis and nutritional amino acids evaluation of green fruit of Areca Catechu between different viaritiesAuthor: Tutor:ABSTRACTAreca Catechu is an important cash crop, which mainly growing in tropical regions. There are varieties of nutrients in the fruits and it can be used as medical resource and health products. In our country, Areca was mainly planted in Hainan province, including local variety, the varity imported from Taiwan, and the artificial breeding species just like “Hot Rsearch No. 1”. The purpose of this paper is to analyze the basic traits and evaluate the nutritional amino acid of “Hot Rsearch No. 1” and Taiwan Areca. Firstly, basic traits of the two Areca was analyzed by observing, measuring, weighting, tasting and the other methods. The results showed that the fruit of “Hot Research No.1” species was much bigger than Taiwan Areca. Moreover, much more Areca catechu alkali and less insoluble dietary fiber were found in “Hot Research No.1”. Thus, it tasted better than Taiwan Areca bacause of stronger chewiness. The High Performance Liquid Chromatography (HPLC) method was established to determine the species and content of amino acids in Areca Ctechu. The resulsts illustrated that the two types of betel nut contained the same amino acid. Both of the two had fourteen kinds of amino acids, of which there are seven kinds of essential amino acids.
