东北农业大学学士学位论文 　　　　学号：菊粉对嗜热链球菌和保加利亚乳杆菌生长的影响 学生姓名：赵畅 指导教师：刘丽波 所在院系：食品学院 所学专业：食品科学与工程 东 北 农 业 大 学 中国·哈尔滨 2014年 6 月 Northeast Agricultural University Bachelor Dissertation No. Inulin on the influence of thermal streptococcus and Bulgaria lactobacillus acidophilus Candidate: Zhao Chang Supervisor: Liu Libo College: Food Science College Major: Food Science and Engineering Northeast Agricultural University Harbin of China June 2014摘要 本实验研究了菊粉对嗜热链球菌和保加利亚乳杆菌的生长影响，在MRS培养基和M17培养基中添加4种不同浓度的菊粉，通过测定生长曲线、ph值曲线、乳酸的测定以及以菊粉为唯一碳源培养，结果表明，菊粉可促进嗜热链球菌和保加利亚乳杆菌的生长，但菊粉为唯一碳源并不利于乳酸菌的生长。在M17培养基中添加3%的菊粉，嗜热链球菌生长最佳；在MRS培养基中添加4%的菊粉，保加利亚乳杆菌生长最佳。菊粉对乳酸菌生长的影响相应改变乳酸的产量。 关键词：菊粉 嗜热链球菌 保加利亚乳杆菌Abstract This experiment studied the inulin to heat of streptococcus and Bulgaria lactobacillus acidophilus, in MRS culture medium and M17 culture medium to add 4 different concentrations of inulin, through the determination of growth curve lactic acid ph curve, and cultivation of inulin as sole carbon source, the results show that the inulin can promote heat of streptococcus and Bulgaria lactobacillus acidophilus, but inulin as the sole carbon source is not conducive to the growth of lactic acid bacteria in the M17 culture medium adding 3% inulin, thermophilic grow best streptococcus; Add 4% of inulin in MRS culture medium, growth of lactic acid bacteria grow best lactobacillus Bulgaria inulin corresponding the influence of the change of lactic acid production.
