摘要2012 年 5 月 14 日 22:40 分，CCTV-1《魅力·纪录》栏目播出了大型美食类纪录片《舌 尖上的中国》（以下简称《舌尖》）。《舌尖》一经播出便引发广泛关注，收视率频创新高， 并迅速成为社会热点话题。在“泛娱乐化”的时代背景下，《舌尖》作为一部美食类纪录 片，能从纷繁复杂的电视节目中脱颖而出，它的成功绝非偶然。它的背后矗立着中华五千 年的文化和历史，经脉里流淌着中国人世世代代的处世哲学和为人之道。虽然是讲述美食 的纪录片，但实质却是在讲人，讲历史，讲文化，讲哲理。有了这种厚重的承载，《舌尖》 的成功也就成为一种必然。基于此，本文试图通过对《舌尖》热播的文化语境、叙述策略、 视听语言特色、创作手法、文化关照等多个层面的梳理研究，揭示其成果的原因，以期为 正在蓬勃发展的美食类纪录片乃至整个中国电视纪录片提供有益的思考和借鉴。本文主要从如下几个部分进行了分析。 第一章里，笔者首先考察了《舌尖》热播的文化语境，从碎片化语境、审美嬗变、受众需求、新媒体传播以及《舌尖》播出的时间等多个方面进行系统论述。 第二章，笔者从叙事策略方面对《舌尖》进行研究，小题大做的叙事题材、独具特色的叙事结构、交叉并叙的多元视角、触摸灵魂的故事表述，构成了《舌尖》极具张力的叙 事系统。第三章，笔者从声画造型方面对《舌尖》进行剖析，画面与声音是构成影像的基本元 素。画面形象性元素方面主要从宏观视角的美食寻觅、微观视角的人物呈现以及美轮美奂 的景物烘托构成审美享受；画面形式性元素方面主要从画面构图、光影呈现、色彩造型、 变速摄影、“刁钻”视角方面进行研究。声音方面，人声带来了真实感、流水式音乐融会 贯通全片。声画组合方面，通过表现蒙太奇和隐喻蒙太奇得以展现。第四章，笔者立足于《舌尖》深处的情感意蕴，对美食背后隐匿的浓厚的人文关怀、 乡土情结、文化关照、文化融汇等进行了细致分析。第五章，笔者希望通过《舌尖》瑕瑜之论的探讨，探究其自身的不足之处，并提出对 于电视纪录片发展的几点启示，以期对电视纪录片工作者有一定的借鉴意义。关键词: 纪录片；《舌尖上的中国》；艺术分析AbstractAt 22:40, May 14th, 2012, A Bite of China (Hereinafter referred to as Bite), a documentary depicting various gourmet items, was broadcast in program Fascinating Document on CCTV-1. Once came out, the series quickly gained high ratings and became a hot topic in our society.With the “pan-entertainment” phenomenon overwhelming in China, as a gourmet documentary, Bite can talent showing itself from the complexities of TV program.Its success is definitely no accident. The documentary carries the five thousand years of Chinese history and culture and embodies the philosophy of life and rules of conduct from generation to generation. Being a gourmet documentary, Bite is, as a matter of fact, talking about people, history, culture and philosophy. Being loaded with the grand Chinese culture, it inevitably becomes a successful documentary. Therefore, this thesis will study Bite from cultural context, narrative tactics, language styles, design concepts, cultural connotations and so on, trying to reveal its factors of success and provide inspirations for the development of gourmet documentaries and ev
