II II 结果表明,卵形鲳鲹可食部位蛋白质含量丰富,在 18%~21%之间;脂肪含 量适中,在 7%~19%之间;氨基酸含量在 18%~23%之间,其中必需氨基 酸含量占氨基酸总量的比值均在 43%以上,风味氨基酸含量占氨基酸总量 的比值均在 44%以上,氨基酸的支/芳值在 2.30~2.40 之间。综合评价卵形 鲳鲹的背部肌肉、腹部肌肉和头部肌肉蛋白质的营养价值较高,而鱼皮和 内脏的蛋白质营养价值较低;同时各可食部位氨基酸的支/芳值接近于人体 标准水平,有助于保护人体肝脏。因此,卵形鲳鲹肌肉蛋白质是一种高级 营养健康食品。 关键词:卵形鲳鲹 光合细菌 生长性能 肝脏 血清指标 营养价值 必需氨基酸 III III EFFECT OF DITE SUPPLEMENTED WITH PHOTOSYNTHETIC BACTERIA ON GROWTH PERFORMANCE, SERUM INDEXES OF LIVER AND PARTS OF THE NUTRITIONAL EVALUATION OF PROTEIN IN TRACHINOTUS OVATUS ABSTRACT In this reserach, we studied the effect of different dietary compound preparation gradient of photosynthetic bacteria on growth, liver and serum indicators of Trachinotus ovatus. The basic nutrient composition in the different tissues of T. ovatus (back muscles, abdominal muscles, head, skin and visceral ) was also determined. The results were as follows: Different gradients of photosynthetic bacteria compound preparation was adding to the feed T. ovatus, 0.0%, 1.0%, 2.0% and 3.0% respectively, to observe the effect of photosynthetic bacteria on growth, liver and serum indicators of T. ovatus. The results showed that FBW, WGR, SGR increased firstly, and then decreased with dietary levels of photosynthetic bacteria presentation increasing; when it was 2%, FBW, WGR, SGR were significantly higher than that of the control group and 3% (P 0.05); ratio of liver weight and body weight (HSI) showed no significant difference between groups (P 0.05); with the increase of photosynthetic bacteria levels, fat content and serum alanine aminotransferase and aspartate aminotransferase activity increased firstly and decreased afterwards in T. ovatus; when it was 2%, fat content in liver of T. ovatus, serum aspartate aminotransferase and alanine aminotransferase activity were PAGE PAGE VI significantly lower than the others (P 0.05). adding the right amount of photosynthetic bacteria compound preparatio into the feed could promote the growth of T. ovatus and reduce the incide
